In light of the swiftly approaching fall season, and my just-eaten delicious pumpkin bread, I just thought I would post some quick facts about pumpkin and it's many health benefits. (and all winter squashes, in general) A pumpkin is a gourd-like squash of the genus Cucurbita and the family Cucurbitaceae (which also includes gourds). Pumpkins are a naturally-occuring source of beta-carotene, an antioxidant that is converted to vitamin A. Also, pumpkins are good sources of vitamin c, potassium, vitamin B6, and folate. Women of child-bearing age and pregnant women should consider adding this delicious gourd for additional folate (in addition to a prenatal vitamin). Pumpkin and it's relatives are also relatively high in fiber and low in calories, with one cup of mashed pumpkin containing only 49 calories, 3 grams of fiber, and only 2 grams of sugar. Consider butternut squash and acorn squash as well for the same nutritional benefits!
